Apple Pie Overnight Oats

I used to love love love a warm bowl of oatmeal, topped with all of my favorite fruits, and nut butters. It was only a few years ago that I discovered overnight oats, and I have to say, I really didn't think I could love oatmeal more, until I had them soaked overnight.

This recipe is great cold, and great warm, so however you want to do it!


I add my apples and pecans in with everything else to soak overnight, and haven't had an issue with brown apples. The nuts do get a bit softened but not soggy, which I don't mind. If you want to add your apples and pecans the day you eat them, that works too!

Ingredients (per serving)

1/2 c. Old Fashioned Rolled Oats

3/4 c. nut milk

1 tbsp. maple syrup

1 tbsp. almond butter

cinnamon

nutmeg

OPTIONAL - 1 scoop vanilla protein

1/2 c. chopped honeycrisp apples

1 tbsp. chopped pecans


Instructions:

In a bowl, jar, or any type of storage container, combine oats, milk, syrup, almond butter, protein (if you're eating your oats cold) cinnamon & nutmeg. Stir completely. Top with apples and pecans. Cover and let soak overnight. Enjoy cold, or warm them up if you like!
