TOFU SCRAMBLE: The Ultimate High-Protein Tofu Scramble (Better Than Eggs!)

I learned how to make this delicious egg - like breakfast scramble by the fabulous Chef Mario Fabbri, and this is my little spin on it!


This is the easiest, most delicious high-protein breakfast that’s budget-friendly and totally egg-free (duh).


PRESSING TOFU? DO I NEED TO ?

Here’s how:

  • Take a 14g protein block of firm tofu (look for high-protein tofu—it’s even denser!).

  • Wrap it in a clean kitchen towel and place a heavy pan or book on top.

  • Let it sit for 15 minutes, and you’re golden.

Pressing it means better texture and a richer taste—no sogginess!


However, if you're like me, and enjoy a creamy scramble, you don't need to do the full 15 minutes, or, you could even skip this step!



The Secret Weapon: Nutritional Yeast

Now, let’s talk about the real MVP: nutritional yeast (aka “nooch”). It adds a deep, cheesy flavor without any dairy and packs tons of protein and B vitamins. Seriously, just 2 tablespoons add about 8 grams of protein!



Easy Tofu Scramble Recipe

Here’s a quick way to make it:

Ingredients

  • 1 block of high-protein firm tofu (pressed)

  • 1 tbsp nutritional yeast

  • 2 tsp turmeric (for that eggy color)

  • 1 tbsp garlic powder

  • 1 tsp onion powder

  • ¼ tsp black salt (kala namak) (for eggy flavor)

  • 1 tbsp avocado oil spray

  • 1 tsp paprika

  • 1 tsp cumin

  • 1/2 cup diced onion

  • 1 tbsp minced garlic

MIX IN VEGGIES: my favorites to add in to this scramble are:

  • fresh spinach

  • cherry tomatoes

  • bell pepper

  • broccoli

Toppings:

  • fresh basil

  • sriracha

  • avocado

  • sprouts


Directions


  1. Heat your skillet on medium heat, add avocado oil. Once heated, add onion and garlic.

  2. Crumble the pressed tofu into a pan over medium heat with a light spray of avocado oil.

  3. Add nutritional yeast, turmeric, garlic powder, onion powder, and black salt. Stir well.

  4. Cook for 5 minutes until warm and slightly golden.

  5. Serve with toast, avocado, or your favorite veggies!


Try it once, and you’ll never miss eggs again. Plus, your grocery bill will thank you! Perfect to have inside a breakfast burrito, on avocado toast, breakfast tacos... for me, anytime, anywhere.
