Brussels Sprouts, Kale & Veggie Balsamic Salad

I have been obsessing over these super simple, flavorful, and delicious fall inspired salads!





This is another fall inspired salad, and filled with lots of nutrients and lots of yummy flavors! I roasted my Brussels sprouts in my air fryer and they came out perfect.



The key to adding the cooked veggies to these salads (if you're meal prepping them) is to let them cool before adding them in!


Dressing:

About 1 & 1/2 tbsp- 1/4 c. Balsamic Vinegar

1 tbsp. Maple Syrup


The salad;

1/4 c. White Onion

1/2 c. Sliced Carrots

1-2 c. Kale (massaged in olive oil)

1/2 c. Baby or Regular Broccoli

3/4 c. Roasted Brussels Sprouts (air fry @ 375 for 10 min- with olive oil, salt, pepper, garlic)



1 tbsp. Walnuts (or Pecans!)

1 tbsp. Dried Cranberries (or your fav dried fruit)





Total cal: ~481 54g. Carbs 24 g. Fat. 8 g. Protein

I tried adding a Trader Joe's Turkeyless Protein Patty with this recipe and it paired perfectly!


Top with a veggie burger when you eat this for extra protein if you'd like!


This makes my meal 721 calories :)
