Mediterranean Style Lettuce Wrap Patty with Lemon Tahini Sauce

So yes, I love love love making lettuce wraps! I find that it makes everything taste so much more flavorful, fresh, and it has the MOST perfect crunch, ever. This "burger" would be great on a cauliflower crust wrap as well.

I wish I had mushrooms in my kitchen when I made this, but overall it was soooo tasty. If you love Mediterranean flavors like I do, you'll love this one!

I have seen a lot of comments asking how to get the perfect lettuce wrap, so here's what I do.

I always buy the largest head of iceberg lettuce at the grocery store for my wraps. When I take it out of the plastic wrap, I do it VERY slowly and carefully. I peel off two pieces of lettuce, again veryyyy carefully and slowly. I start by ripping at the core and peeling it off to make sure nothing rips. The top two pieces are the biggest so I usually use those for my wraps. The second layer is usually a bit stronger, but a little bit smaller, and those should work two. So with one head of lettuce you can get 2 good sized lettuce wraps.

I use the rest of the head of lettuce for salads! I mix it in with romaine, spinach etc. because the iceberg lettuce doesn't provide much nutrients!

Hope this helps!

Let's make this super tasty patty!

Patty/Seasoning:

3/4 c. Impossible Ground "Meat" (this one is soy based, so I don't eat it very frequently. but it tastes amazing)

fresh lemon juice

garlic powder

salt

pepper

fresh parsley

oregano

Mix together in a bowl, and roll into small patty. Set aside, and prepare lemon tahini sauce.

Lemon Tahini Sauce:

1/2 c. tahini

2 tbsp. fresh lemon juice

salt

2 tbsp. olive oil

1-3 cloves fresh garlic, pressed

fresh parsley (a must for this!) , finely chopped

I like this sauce thick, but if you want it more runny- you may slowly add 2 tbsp. cold water while mixing: 1 tbsp at a time.

Mix this in a bowl, blending is not required!

Now cook the patty on high heat. On a skillet, cook each side 4 minutes, or until browned.

Assemble lettuce wrap:

Add:

1 tbsp. diced cucumber

1 tbsp. diced onion

1 tbsp. diced tomato

1/2 cup steamed lentils

Lemon tahini sauce

Cooked patty

Wrap it up and enjoy!
