Sweet Potato Tortilla Tacos w/ Black Bean Dip

Homemade tortillas just hit different.

I really just love how simple it was to make my own tortillas, and I feel much better eating them knowing that they aren't filled with extra unnecessary ingredients. Simplicity is always key in my kitchen.


To make your own tortillas, you'll just need 1 large sweet potato, and your choice of flour!


  1. Chop sweet potato into large chunks.

  2. Bring a pot of water to a boil, and add your sweet potato chunks. Boil until soft and tender.

  3. Drain your potatoes, and then mash them up completely smooth.

  4. The exact amount of flour you'll need is going to vary dependent on your potato size, however about 1 cup of flour should be enough for an average sized sweet potato.

  5. Blend until smooth into a dough.

  6. Break your dough into small sections and begin to roll out into a circle shaped tortilla.

  7. Add olive oil to a skillet to medium heat, and add your tortilla.

  8. Flip to cook both sides. About 2-3 minutes per side.

  9. Let cool on paper towels to dry, and remove excess oil.

Once your tortillas are finished, begin to prepare your toppings, and bean dip.


This bean dip was so delicious, simple to make, and tasted so fresh!

To make this delicious dip, you'll need:

-1 can black beans (or dry if you prefer)

-1/2 cup diced red onion

-1/2 cup diced tomato

-1-2 garlic cloves

-salt

-pepper

-cumin

-fresh lime juice



Instructions:

  1. In a skillet, on medium heat, add 3/4 cup black beans. Cook until they're warmed through!

  2. In a food processor add your beans, onion, tomato, garlic, salt, pepper, cumin, and lime juice. Blend until completely smooth.

Now to assemble our delicious tacos!

The toppings are entirely up to you!


Heres what I added to my tacos:

-black bean dip

-fresh diced tomato

-avocado

-pineapple salsa

-jalapeno peppers

-fresh cilantro

-squeeze of lime juice




So delicious! Couldn't get enough of them! Hope you love them too!
