Spring is finally here, and I couldn't be more excited! This season is filled with vibrant colors and fresh ingredients that inspire wellness. The arrival of spring rekindles my motivation, even more than New Year’s resolutions. I hope that my excitement for spring translates into your life, motivating you to embrace this season and reset your routine!
Having fresh salads in your fridge will boost your energy levels. You'll find yourself feeling lighter and more invigorated, ready to enjoy the beautiful days ahead.
Let’s kick off this journey with an amazing Lemon Garlic Dressing that you'll absolutely love!
What You’ll Need for the Dressing:
1/2 cup fresh lemon juice (about 2 large lemons)
5 cloves garlic, finely minced or grated
1/2 cup avocado oil
Lemon zest
1 teaspoon garlic powder
½ teaspoon sea salt
¼ teaspoon black pepper
1/2 teaspoon turmeric for color and flavor
How to Make the Dressing:
In a mixing bowl, whisk together the lemon juice, garlic, salt, and pepper.
While whisking, slowly drizzle in the avocado oil until the mixture emulsifies.
Taste the dressing. If you want more brightness, add a tad more lemon juice.
If you like a sweeter taste, a touch of maple syrup works well.
Pour this delicious dressing over your favorite salad, roasted vegetables, or even use it as a marinade for tofu!
Creating the Perfect Salad
Now let’s move on to the layered salad jar recipe. This is a fantastic way to enjoy a nutritious meal. The layers keep everything fresh and delicious.
Ingredients Needed:
1/2 cup onion, thinly sliced
1/2 cup cucumber, diced
1/2 cup cherry tomatoes, halved
1/2 cup shredded or chopped carrots
1/2 cup sprouted beans or any protein of your choice (optional)
1/2 cup broccoli sprouts
1/2 cup mixed greens (like spinach, arugula, or lettuce; red oak lettuce is my favorite!)
1 tbsp sprouted seeds or nuts
How to Layer Your Salad Jar:
Begin with the denser ingredients at the bottom, like onions and cucumbers.
Follow with softer ingredients such as cherry tomatoes and shredded carrots.
Add the sprouted beans or protein, then the broccoli sprouts.
Top it all off with the mixed greens.
Lastly, sprinkle the sprouted seeds or nuts.
Each time you open the jar, you'll find a fresh and crunchy salad, perfect for any meal!
Enjoy the Benefits of Spring Salads
Eating fresh salads is not only refreshing, but they are also packed with vitamins and nutrients. The combination of ingredients like sprouted beans and mixed greens promotes digestive health and boosts your immune system.
As the weather warms up, it’s time to bring vibrant dishes into your kitchen. Whether you're enjoying it as a side or main meal, salads can be a delightful addition to your table.
Embrace spring, make these rejuvenating salads, and feel the renewed energy that comes with them. Enjoy each bite and savor the flavors of the season!
