The Best Apple Pie Overnight Oats: Breakfast Jars That Double As Dessert

After living in LA the past 4 years, I realized how much I love and have missed the fall season. Summer will always be my favorite, but fall is a very close second. However, when it comes to flavors, fall wins every time for me. Honeycrisp apples, maple syrup, pecans, cinnamon, vanilla...
I actually didn't learn about the benefits of oatmeal until I became obsessed with fitness in 2014. This period of my life was extremely transformational for me in so many ways.
It was after just one year in college, I was a sophomore, 20 years old, and nearly overnight, I turned from the party girl that went out to the Boston bars every night, to the cross-country athlete, salad obsessed, gym rat. I was so obsessed with how I felt when I first started lifting weights, moving my body daily, and pushing myself, that it became my new identity which lasted for the past decade.
I didn't just workout a lot, I actually began training and preparing for bodybuilding-bikini competitions. I worked with a personal trainer, nutritionist, and posing coach. My coach created my meal plan, and taught me so much about dieting, fat loss, protein, muscle growth, and more.

Throughout the process of training and dieting, I watched how my body transformed so much, but even just through simple, minor tweaks in my diet. It really blew my mind how such small changes could make such significant changes. This led me to become obsessed with learning more about my body, nutrition, vitamins, macro and micronutrients, supplements, different workouts, and anything related to healing my body, mind, and improving myself.
This experience became foundational for me. As I shifted from dieting for competitions to eating just regular meals, I found myself still loving a lot of the aspects of the diet. I continued using either ingredients, meal prep methods, and my own weird recipes from my competition diet for my normal meals, most of which I still do today.
Although cooking has always been something I've naturally loved, especially since growing up watching and cooking with my mom every night for dinner, it all really grew the more I learned about nutrition. I started to combine my cooking skills I learned from my childhood of making food taste really good, with what I started to learn about portioning and nutrition, and that's when I started making cooking videos, and then launched my meal prep company in 2017.

Apple Pie Overnight Oats
It's simple, comforting, and tastes like a dream. The ingredients haven't changed much throughout the years, but throughout the variations, I have fully perfected the recipe.
Apple Pie Overnight Oats Recipe
Preparation time: 10 min Cooking time: 10 min
Makes 3 Overnight Oats Jars

Ingredients (total)
1½ cup rolled oats
2 cups unsweetened almond milk
2 organic honeycrisp (the best apples for this recipe) apples, diced
¾ cup candied pecans, or raw
Maple syrup
Pinch of salt
3 tsp Cinnamon
2 tsp Nutmeg
3 scoops Vanilla protein powder
1 tbsp Coconut oil
Coconut yogurt
Instructions
Prepare the apple topping. Heat a pan with 1 tbsp coconut oil, once melted, add in diced apples. Lightly cover the apples with 2 tbsp maple syrup, dash of cinnamon and small pinch of nutmeg. Stir frequently, and cook for ~5 minutes, or until apples are softened.
To candy the pecans, preheat your oven to 300 degrees fahrenheit. In a bowl, mix 3/4 cup pecans with 2 tsbp maple syrup, a pinch of salt, and a dash of cinnamon. Mix until the pecans are well coated. Then transfer onto a parchment lined baking sheet, and bake at 300 for 20-30 minutes.
To begin meal prepping, add ½ cup rolled oats to each jar, mix with 3/4 cup almond milk, add a dash of cinnamon, 1 scoop vanilla protein power, and then stir until well combined. Add more almond milk for your desired texture.
Top each jar with 1/2 cup carmalized apples, 1/4 cup candied or raw pecans, pinch of salt, and a dash of cinnamon.
Add airtight seal lids to the jars, and keep refrigerated until time of eating, at least 4 hours. These are good for up to 5 days!
When serving, enjoy with 1 tbsp coconut yogurt ( I love cocojune!) mixed together with 1 tsp maple syrup, cinnamon, and a tiny drop of fresh lemon, if desired. Swirl this into your oats, and enjoy!
