Sprouted Bean Salad

IN MY GIANT MEAL PREP SALAD ERA.
IN MY GIANT MEAL PREP SALAD ERA.

Measurements are for 1 serving:


Dressing

1.5 tbsp red wine vinegar

1 tbsp extra virgin olive oil

juice of 1 lime

seasonings to taste: salt, pepper, garlic, oregano, paprika, cumin, chili powder

optional: sweetener agave, or maple syrup


Salad:

1-2 minced garlic cloves

1 tbsp minced shallot

1 tbsp minced jalapeño

1/4 cup diced roma tomatoes

1/4 cup corn

1/2 cup sliced cabbage

1/4 cup sprouted black beans*

1/4 cup sprouted pinto beans*

1/4 cup diced bell pepper

1/4 cup chopped avocado

fresh cilantro

broccoli sprouts*

pumpkin seeds
