Crunchy Summer Salad with Homegrown Sprouts & Creamy Champagne Dressing

Nothing hits like a crisp, refreshing salad that actually fills you up and feels alive. This one is juicy, crunchy, herby, and just a little creamy—perfect for hot days, lazy lunches, or when you need a plate full of color and texture. 🥗 Crunchy Cucumber & Sprout Salad
Serves 2 as a main or 4 as a side
Ingredients:
Salad Base:
1 large cucumber, peeled and chopped
½ red onion, diced
2–3 thick slices of heirloom tomato (any color!)
1 ripe kiwi, peeled and sliced
½ cup cooked navy beans (optional)
¼ cup fresh blueberries (optional but juicy and fun)
A big handful of homegrown alfalfa sprouts ( I grow my own using The Sprouting Company kits!)
Fresh basil leaves, torn
Watermelon Radish (for a crunch, and touch of pink!)
Dressing:
1 tbsp champagne vinegar
1 tsp Dijon mustard
Juice of ½ lemon
Seasoning:
Sea salt, to taste
Garlic powder
Onion powder
Dried oregano
Instructions:
Whisk your dressing in a small bowl: Combine Fabalish mayo, champagne vinegar, Dijon mustard, seasonings and lemon juice. Mix until smooth and creamy. Set aside.
Prep your produce: Chop cucumbers, dice onions, slice kiwi and tomatoes. If using, rinse and drain your beans and blueberries.
Toss your base: In a large bowl, combine cucumber, red onion, tomatoes, kiwi, navy beans (if using), and blueberries (if using). Add torn basil leaves.
Season generously. Salt those tomatoes and cucumbers so they get juicy.
Drizzle dressing over the salad and mix gently until everything is coated but not soggy.
Top with sprouts and radish! Just before serving, pile on your homegrown alfalfa sprouts and watermelon radish for the ultimate crunch and vitality boost.
